Moros y Cristianos
(Moors and Christians - Beans and Rice)
serves 4-6
- 500g black beans, cooked or canned)
- cooked white rice
- 1 large onion, finely chopped
- 3 garlic cloves, crushed (add more or less to your taste)
- 1 tbsp olive oil, for frying
- 1 medium green pepper, seeded and chopped
- 250-300ml chicken stock
- 3 tbsp tomato purée or 1 tin tomatoes
- 3 tsp ground cumin
- salt and pepper, to taste
Instructions:
- Heat oil and gently fry onion, garlic and pepper until soft
- Add tomato, beans, cumin and chicken stock
- Add rice and cook over low heat in a covered pan, stirring occassionally until rice cooked
- Season with salt and pepper
- Optional: Garnish with coriander and or parsley
