Dulce de Leche
(Sweet Milk Dessert)
Serves 6-8

  • 2 litres full fat milk
  • 12 tbsp sugar
  • 1 tbsp vanilla

Instructions:

  1. Over a medium high heat, heat the milk in a large pan
  2. When boiling, add 1-2 teaspoons of sugar every 5 minutes
  3. After approx 30 minutes when all the sugar has been added, add the vanilla
  4. Remove from heat when mixture gets a 'crumbly' textrure
  5. Be careful not to let mixture burn or get darker than a light tan colour
  6. Mix to a paste and serve when cool

The cheat or easy version of this recipe is to use a can a can of sweetened condensed milk, which takes just a short time. Empty the contents into a saucepan and heat over a medium low heat. Stir constantly until the liquid is of the desired consistency. Allow to cool, mix again and serve.
